Hello Fresh: Grilled Chicken and Mediterranean Vegetable Stack

Another recipe from Hello Fresh Box! This time it's Grilled Chicken and Mediterranean Vegetable Stack. The box arrived with so much ingredients, it took a few minutes to unpack it: the meat was sealed separate from the vegetables, nestled between the vegetables. The instructions were relatively simple and easy to follow.

Ingredients: (for 2 people/ or for 2 meals)

  • 1/2  eggplant
  • 1 zucchini
  • 1 red capsicum
  • 350g chicken breast, sliced in 1cm fillets
  • 100ml green style yoghurt
  • 1/4 cup dill, finely chopped
  • 1 lemon, juiced
  • 3 sprigs fresh oregano
  • 1 clove, crushed

Recipe Step-by-step :

  1.  Turn on a oven, barbecue or griddle pan to high heat.
  2. Combine half of the lemon juice, oregano, and garlic in a large bowl.
  3. Add the chicken and coat well.
  4. Slice the eggplant into 1 cm thick rounds
  5. Slice the zucchini horizontally into 1/2 cm thick ribbons
  6. Dice the capsicum so that you have 4 ‘panels’
  7. Add oil to pan / grill
  8. Cook the vegetables for about 4-5 minutes each side
  9. Cook the chicken
  10. Stack the meat and vegetables, top it off with the yogurt, dill, and remaining lemon juice


Rating [Taste] = 8/10

Conclusion

I really enjoyed this recipe, it was simple and easy to follow. The food was also cooked relatively fast.
